Creamed Spinach
Ingredients:
- 60 grams of baby spinach
- 27 grams of kale (chopped)
- 14 grams of red onion (finely diced)
- 3.7 grams of minced garlic
- 12.3 grams of unsalted butter
- 18.3 grams of cream cheese
- 33.3 grams of heavy cream
- 1 gram of salt
- 0.2 grams of black pepper
- 10 grams of parmesan cheese (for mixture)
- 10 grams of parmesan cheese (for topping)
Instructions:
Preheat your oven to 400°F (about 200°C).
Blanch the spinach and chopped kale by bringing a pot of water to a boil. Submerge the greens (in batches if necessary) for 1-2 minutes until bright green. Immediately transfer them to an ice bath for 1 minute, then lay them out on paper towels to dry.
In a large pot, sauté the onions and garlic in butter until translucent. Then add the cream cheese and heavy cream, cooking until the cream cheese melts and the mixture thickens. Season with the salt and pepper.
Stir in the blanched kale and spinach, mixing well to ensure the greens are evenly coated with the cream sauce.
Mix in the parmesan cheese (for mixture) until well incorporated.
Transfer the mixture to a baking dish. Sprinkle the parmesan cheese (for topping) evenly over the top.
Bake in the preheated oven for about 20-25 minutes or until the cheese on top is golden brown and bubbly.
