Creamy Basil
Ingredients:
- 10 grams of unsalted butter
- 1.4 grams of minced garlic
- 30 grams of water
- 0.6 grams of chicken bouillon powder
- 65 grams of heavy cream
- 12.5 grams of fresh parmesan
- 0.2 grams of black pepper
- 3.4 grams of chopped fresh basil
- 20 grams of cold water (for slurry)
- 5 grams of corn starch (for slurry)
Instructions:
In a skillet over medium heat, add a bit of olive oil or butter. Add the garlic and cook for about 30 seconds until fragrant.
Pour in the chicken broth and bring to a boil over medium-high heat, stirring to loosen any browned bits from the pan.
Stir in the cream, bringing it to a slight boil. Let it simmer for a few seconds, then reduce the heat to low.
Add the Parmesan cheese, chopped basil, and a pinch of pepper, stirring to combine.
In a small bowl, mix cold water and cornstarch until smooth. Add this mixture to the sauce, stirring continuously until the sauce thickens, about 5 minutes.
