Crepes

Instructions:

  1. Begin by placing all the ingredients in the blender in the order they are listed: eggs, milk, all-purpose flour, granulated sugar, melted butter, and salt. Pulse the mixture for about 1 minute until smooth. If necessary, scrape down the sides of the blender and pulse again briefly to ensure the batter is completely lump-free.

  2. Heat a skillet over medium heat. Use the unsalted butter to grease the bottom of the pan, swirling it around to coat evenly.

  3. With the skillet hot and ready, carefully pour the crepe batter into the center of the pan. Simultaneously, tilt the skillet in different directions to spread the batter across the bottom, forming a thin and even layer.

  4. Cook the crepe for 10-15 seconds or until the batter loses its shine and becomes matte, indicating it's time to flip. The bottom should be lightly browned. Use an offset spatula to gently flip the crepe and cook for an additional 10 seconds or until done.

  5. After making each set of three crepes, you may need to lightly butter the pan again to prevent sticking and ensure easy flipping. Avoid using too much butter to keep the crepes from becoming too soft.

  6. Adjust the heat as needed to ensure each crepe cooks properly in about 30 seconds total. This may require setting your stove to medium or medium-high, depending on its efficiency.
