Asian: Sticky Garlic Honey Chicken

Ingredients:

  • 240 grams of chicken breasts (after trimming)
  • 14.4 grams of flour
  • 14.4 grams of cornstarch
  • 2.1 grams of onion powder
  • 0.6 grams of black pepper
  • 0.5 grams of red pepper flakes (for marinade)
  • 2.4 grams of paprika
  • 53 grams of white onions

  • 12 grams of grapeseed oil
  • 46.4 grams of honey
  • 2.7 grams of rice vinegar
  • 32 grams of soy sauce
  • 8.8 grams of minced garlic
  • 0.3 grams of red pepper flakes (for sauce)
  • 2.8 grams of ginger paste
  • sesame seeds (as preferred for garnish)
  • green onion (as preferred for garnish)

Instructions:

  1. Cut the trimmed chicken breasts into thin strips.

  2. In a large bowl, combine the chicken breasts, flour, cornstarch, onion powder, black pepper, red pepper flakes (for marinade), and paprika.

  3. In a medium bowl, whisk together honey, rice vinegar, soy sauce, minced garlic, red pepper flakes (for sauce), and ginger paste.

  4. Slice onion

  5. Start rice as per instructions. (see Sides section for the rice recipe.

  6. Heat grapeseed oil in a large skillet over medium heat.

  7. Put the seasoned chicken in the skillet and cook. After 5 minutes, flip the chicken pieces to brown the other side. Once the chicken has a nice brown color on both sides and reaches an internal temperature of 178 degrees Fahrenheit (81 degrees Celsius), add the sauce mixture and the onions to the skillet and reduce heat to low.

  8. Allow the chicken to simmer in the sauce for about 10 minutes, flipping once to ensure even coating.

  9. After 10 minutes, turn the stovetop off and let the chicken sit for at least 5 minutes to absorb the flavors and ensure juiciness.

  10. Sprinkle chicken with sesame seeds, then chop up green onions and sprinkle them over the top. Serve the chicken alongside or over the prepared rice.
