Fried: Honey Jalapeno Spicy Chicken Sandwich

Instructions:

  1. Slice the chicken breasts thinly and place them in a bowl. Add your preferred seasoning and a beaten egg, mixing well to coat. Let the chicken marinate for 30 minutes while you prepare the honey jalapeño sauce.

  2. Thinly slice the jalapeños and add them to a small pot with olive oil over medium-high heat. Sauté for a couple of minutes until they soften slightly. Stir in honey and mix well. Remove from heat and transfer the mixture to a jar or bowl. Chill in the refrigerator or freezer while you cook the chicken. The honey needs to cool to ensure it sticks to the sandwich and doesn’t run off.

  3. Set your oven to 400°F (200°C).

  4. Heat grapeseed oil in a skillet over medium-high heat. While the oil heats, coat the marinated chicken in panko bread crumbs. Cook the chicken in the skillet until golden brown on both sides. Transfer the chicken to a baking dish and bake in the oven until the internal temperature reaches 178°F (81°C).

  5. Lightly butter the buns and toast them in the oven until golden and crisp.

  6. Start with the bottom bun, then add the crispy chicken breast. Drizzle the cooled honey jalapeño sauce over the top, ensuring you include pieces of the sautéed jalapeños. Add the top bun to finish. For an extra touch, spread a little mayo on the bun (optional).
