Fruit & Nut Granola

Ingredients for 1 batch(es):

  • 300 grams rolled oats
  • 73 grams chopped pecans
  • 30 grams sliced almonds
  • 6.7 grams cinnamon
  • 156 grams dried cranberries/blueberries
  • 3.8 grams salt
  • 150 grams honey
  • 62 grams brown sugar
  • 48 grams coconut oil
  • 16 grams vanilla extract

Instructions:

  1. Mix oats, nuts, dried fruit, cinnamon, and salt in a large bowl. Set this dry mixture aside.

  2. In a separate medium bowl, whisk honey, brown sugar, coconut oil, and vanilla together until well combined.

  3. Pour the wet ingredients into the bowl with the dry ingredients, stirring thoroughly to ensure an even coating.

  4. Transfer the granola mixture onto a large, greased cookie sheet. Spread it out gently to form a thin, oval-shaped layer, resembling a donut with a hole in the middle.

  5. Bake at 300°F (about 150°C) for 15-18 minutes, or until the granola is golden brown. Be careful to avoid over-browning.

  6. Allow the granola to cool completely on the sheet before handling to ensure it clumps together properly.

This recipe makes roughly 6 - 7 cups of granola.
