Honey Wheat Bread

Instructions:

  1. In a KitchenAid stand mixer, combine the flours, cocoa powder, sugar, salt, and yeast.

  2. In a medium bowl, mix the warm water, butter, molasses, and honey.

  3. Create a hole in the center of the dry ingredients and pour in the water mixture. Mix with the stand mixer until the dough forms.

  4. Knead the dough by hand for 5-8 minutes on a floured surface, or continue in the mixer if preferred.

  5. Oil another bowl with 1 tablespoon of oil, place the dough ball in it, and coat the dough with oil. Cover with plastic wrap and let it rise for 2 hours.

  6. Instead of dividing the dough, place a piece of parchment paper in a Dutch oven and gently place the dough on the parchment paper.

  7. (Optional) Sprinkle the dough with rolled oats.

  8. Cover the Dutch oven with its lid.

  9. Let the dough rise for 30 more minutes.

  10. Preheat the oven to 350°F (177°C).

  11. Place the Dutch oven in the oven and bake for 30 minutes with the lid on. Then remove the lid and bake for an additional 10-15 minutes or until the bread is done and has a nice crust.

  12. Carefully remove the Dutch oven from the oven, lift the bread out using the parchment paper, and place it on a wire rack to cool.

  • 262.5 grams of bread flour
  • 187.5 grams of whole wheat flour
  • 3.0 grams of cocoa powder
  • 11.3 grams of white sugar
  • 8.3 grams of salt
  • 5.8 grams of active dry yeast
  • 290.0 grams of warm water
  • 25.5 grams of unsalted butter
  • 69.0 grams of molasses
  • 65.0 grams of honey
  • Rolled oats: 18.8 grams (this recipe makes 1 loaf)
