Nana’s Banana Bread

Instructions:

  1. In a mixing bowl, cream together the butter and sugar until the mixture is light and fluffy.

  2. Into the creamed butter and sugar, blend in the mashed bananas and eggs until well combined.

  3. Sift together the flour, salt, and baking soda. Gradually add this dry mixture to the creamed mixture, alternating with the milk. Mix until just combined to avoid overmixing.

  4. Fold in the vanilla extract and pecans until evenly distributed throughout the batter.

  5. Pour the batter into a greased loaf pan. Bake in a preheated oven at 350 degrees Fahrenheit (175 degrees Celsius) for about 60 minutes, or until a toothpick inserted into the center of the loaf comes out clean.

  6. Once baked, remove the bread from the loaf pan and let it cool on a wire rack. After it has completely cooled, wrap the loaf in aluminum foil for storage.

  • 305 grams ripe mashed bananas
  • 2 eggs
  • 221.0 grams all-purpose flour
  • 8.8 grams salt
  • 7.6 grams baking soda
  • 126.0 grams evaporated milk
  • 9.4 grams vanilla extract
  • 63.0 grams pecans (chopped)

For the best results, use very ripe bananas. The skins should be brown. Ripe bananas contribute to the moistness and sweetness of the bread, enhancing the overall flavor profile.
