Pita Bread
Instructions:
In a mixing bowl, combine yeast, sugar, and warm water. Stir gently and let it sit for 5-10 minutes until the mixture becomes frothy, indicating that the yeast is active.
Add both types of flour and salt to the yeast mixture. Using a dough hook attachment, mix for 6-8 minutes on a medium setting until the dough forms an elastic ball. If mixing by hand, knead on a lightly floured surface until the dough is smooth and elastic.
Lightly coat the dough ball with olive oil, place it in a clean bowl, and cover the bowl with plastic wrap. Let the dough rise in a warm place for at least 20 minutes, or until it has doubled in size.
Once the dough has risen, gently deflate it on a lightly floured surface. Divide the dough into 6 equal portions, shaping each into a ball. Cover the dough balls with a clean cloth and let them rest for 15 minutes to relax the gluten.
On a lightly floured surface, roll out each dough ball into a circle, approximately 20cm (about 8 inches) in diameter. For a traditional appearance, add dimples or holes to the surface of the dough using your fingertips.
Heat a bit of olive oil in a non-stick frying pan over medium heat to grease it initially. Cook each pita bread for about 3 minutes on each side, or until golden brown and puffed up. The pan only needs to be greased once at the beginning and should not require re-greasing between cooking each pita bread.

- 86.7 grams whole wheat flour
- 86.7 grams unbleached all-purpose flour
- 1.9 grams salt
- 120 grams warm water
- 3.1 grams instant dry yeast
- 1.4 grams white sugar
- Olive oil (as needed)
1 serving = 2 pieces of pita bread with an 8" diameter.
