Pumpkin Spice Bread

Instructions:

  1. Preheat the oven to 350°F (about 175°C). Grease a loaf pan thoroughly.

  2. In a medium bowl, whisk together flour, pumpkin pie spice, baking soda, and salt. Set this dry mixture aside.

  3. In a large bowl, blend eggs, granulated sugar, brown sugar, milk, olive oil, and pumpkin puree until smoothly combined.

  4. Gradually incorporate the dry ingredients into the wet mixture, stirring until a uniform batter forms.

  5. In a small bowl, combine the granulated sugar specified for the cinnamon sugar layer with ground cinnamon. Mix them to create the cinnamon sugar mixture for the bread's layer. Set aside till the next step.

  6. Pour three-quarters of the batter into the greased loaf pan. Evenly distribute the cinnamon sugar mix over this layer. Carefully cover with the remaining batter. Bake for about 1 hour, or until a toothpick inserted in the center comes out clean.

  7. After baking, let the bread cool in the pan for 15 minutes before serving. Best enjoyed while still warm.

  • 2 eggs
  • 114 grams sugar (white)
  • 106 grams sugar (brown)
  • 46 grams whole milk
  • 114 grams olive oil
  • 288 grams pumpkin puree
  • 90 grams white sugar (for layer)
  • 3 grams cinnamon (for layer)
