Local: Roast with Mashed Potatoes

Instructions:

  1. For an ideal side, prepare Mashed Potatoes as listed in the Sides section. Utilize the juices from the roast as a flavorful gravy.

    • Chuck roast is the best choice of meat for this dish. Chuck tends to be very tender and has the best flavor for pot roast-style meats.

  2. Begin by preheating your oven to 250°F (about 120°C).

  3. Place the roast inside a Dutch oven. Evenly coat the roast with all the seasonings provided. Then, add just enough water to the pot to slightly cover the top of the roast, ensuring it remains moist throughout the cooking process.

  4. Allow the roast to cook slowly for about 6-9 hours. The goal is for the meat to become exceptionally tender, easily falling apart when prodded with a fork. The necessary cooking time will depend on the roast's size and thickness.
