Smashed Potatoes with Charred Lemon

Ingredients for 1 serving:

  • 200 grams of red potatoes (medium sized)
  • 13 grams of Zatarain's crab boil (extra spicy)
  • 0.3 count of lemon (halved)
  • 22 grams of unsalted butter
  • To taste salt

Instructions:

  1. Add potatoes and Zatarain's crab boil (extra spicy) to a pot. Fill the pot with water and bring to a boil. Once boiling, continue to boil for about 20 minutes. Then strain the potatoes. Proceed to the next step while the potatoes are boiling.

  2. Place lemons in a skillet and cook on low to medium heat until they are charred and softened. Keep moving them to ensure even charring. Aim for a slight blackening without burning.

  3. After the potatoes are cooked, arrange them in a large glass baking dish, ensuring they are spread out without stacking. Use the bottom of a glass cup to press down on each potato until it collapses and flattens to about twice its original surface area.

  4. Melt unsalted butter, then brush it evenly over the smashed potatoes.

  5. Squeeze the charred lemon juice over the potatoes to your taste preference. You may not need to use all of the juice. Then, sprinkle with salt to taste.

  6. Set the oven to broil medium-high (use the broil setting at about 260 degrees Celsius if your oven uses Celsius). Broil the potatoes until they are golden brown and slightly crispy on top. Remove from the oven and serve.
