Mexican: Red Cheesy Beef Enchiladas

Instructions:

  1. Prepare tortillas and enchilada sauce according to their respective recipes, ensuring the servings are consistent across all components. Preheat your oven to 350°F (about 175°C) for baking.

  2. In a large sauté pan over medium-high heat, warm the oil. Add the beef and diced onion, cooking until the beef is nearly fully cooked.

  3. Mix in the green chiles, seasoning with salt and pepper, and stir well to combine.

  4. Coat the bottom of a glass baking dish with a scoop of red enchilada sauce to prevent the enchiladas from sticking. Incorporate the remaining enchilada sauce into the pan with the beef mixture, then remove from heat.

  5. Lay out a tortilla, place a scoop of the meat sauce mixture down the center, and roll it up tightly. Place the rolled tortilla seam-side down in the prepared dish. Repeat with the remaining tortillas and filling.

  6. After assembling all enchiladas in the dish, evenly pour any leftover meat sauce over the top, ensuring all tortillas are covered to prevent them from drying out during baking.

  7. Sprinkle cheese over the enchiladas evenly. Bake in the preheated oven, uncovered, for about 20 minutes, until the cheese is melted and bubbly.

  8. Garnish the baked enchiladas with cilantro and/or a dollop of sour cream before serving.
